Ingredients

  • 500–600g Lean ground beef
  • 1 large Onion (diced)
  • 3–4 Garlic cloves (minced)
  • 1 can (400g) Canned kidney beans (drained)
  • 1 can (400g) Canned chopped tomatoes
  • 2 tbsp Tomato paste
  • 2–3 tbsp (adjust for heat) Chili powder
  • 1 tsp Ground cumin
  • 1 tsp Smoked paprika
  • 1 cup Beef or vegetable broth
  • 1–2 tbsp Olive oil
  • to taste Salt + black pepper

Method

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and cook 5 minutes until soft and translucent.
  3. Add minced garlic and cook 1 more minute.
  4. Add ground beef, break it up with a spoon, and cook until browned (8–10 minutes). Drain excess fat if needed.
  5. Stir in chili powder, cumin, smoked paprika, salt, and pepper. Cook 1 minute to bloom the spices.
  6. Add tomato paste and cook 1–2 minutes.
  7. Pour in chopped tomatoes and broth. Stir well.
  8. Add kidney beans. Bring to a simmer, then reduce heat to low.
  9. Cover and cook 45–60 minutes, stirring occasionally, until thickened and flavorful.
  10. Taste and adjust seasoning (more chili powder, salt, or a splash of vinegar for brightness).
  11. Serve hot with rice, cornbread, or tortilla chips — Tom’s go-to batch-cooked comfort meal.
