Ingredients
- 1 lb Ground beef
- 1 medium diced Onion
- 2 cloves minced Garlic
- 1 tsp Cumin
- 1 tsp Chili powder
- to taste Salt
- 1 cup Refried beans
- 1 cup Shredded cheese (cheddar or Monterey Jack)
- 8 Flour tortillas (10-inch)
- for frying Vegetable oil
- for serving Lettuce, tomato, sour cream, guacamole
Method
- Heat 1 Tbsp oil in skillet over medium-high. Add beef, onion, garlic; cook until beef browns, 8-10 min. Drain fat.
- Stir in cumin, chili powder, salt; cook 2 min. Mix in refried beans, heat through. Remove from heat, stir in ½ cup cheese.
- Warm tortillas in microwave 30 sec. Spoon ½ cup filling onto each, top with remaining cheese. Fold sides in, roll tightly, secure with toothpicks.
- Heat 2 inches oil in deep pot to 350°F (use thermometer). Fry chimichangas 2-3 at a time, seam down, 3-5 min per side until golden and crispy. Drain on paper towels.
- Remove toothpicks. Serve hot with shredded lettuce, diced tomato, sour cream, guacamole on side.
