Ingredients

  • 1 cup raw Hulled pumpkin seeds (pepitas)
  • 8-10 medium Tomatillos
  • 1-3 (to taste) Serrano or jalapeño chiles
  • ½ medium White onion
  • 3-4 Garlic cloves
  • ½ cup packed Fresh cilantro
  • few leaves Epazote (optional)
  • 2-3 cups Chicken or vegetable broth
  • 2-3 Tbsp Vegetable oil or lard
  • to taste Salt

Method

  1. Toast pepitas in dry skillet until golden and popping (4-6 min), cool.
  2. Char tomatillos, onion, garlic, and chiles until blackened.
  3. Blend toasted seeds + charred vegetables + herbs + 1 cup broth until very smooth.
  4. Heat oil in pot, pour in puree, cook stirring 8-12 min until thickened and deepened in color.
  5. Thin with remaining broth to desired consistency, season with salt.
  6. Simmer protein (chicken, pork, shrimp) in sauce or serve over vegetables/enchiladas.
