Ingredients
- 1 lb loose Fresh Mexican chorizo (or homemade)
- 8-10 Small corn tortillas (4-5 inch)
- light brush or spray Oil
- onion, cilantro, lime, salsa, queso fresco Toppings
Method
- Heat a large cast-iron skillet or griddle over medium-high heat until very hot (smoking lightly). Lightly oil if needed.
- Form loose chorizo into thin patties (about ¼ cup each, flattened to fit tortilla size).
- Place a tortilla on the hot surface. Immediately place a chorizo patty on top of the tortilla and smash/press firmly with a spatula (or burger press) to spread chorizo thinly across the tortilla — press for 10-20 seconds so it adheres and cooks into the tortilla.
- Cook 3-4 minutes until chorizo is browned and crispy on the bottom, and tortilla is toasty. The steam from the hot surface cooks the chorizo through even though only one side touches the heat.
- Flip carefully (chorizo side up now), cook 1-2 minutes more to crisp the tortilla side if desired.
- Remove, fold in half if not already shaped, or serve open-face. Top with diced onion, cilantro, lime squeeze, salsa, queso fresco, or crema.
- Serve immediately for best texture — the chorizo 'shell' is crispy, flavorful, and fused to the tortilla.
