Ingredients

  • 2 cups (about 240g) — brands like Maseca Azul or Bob's Red Mill Blue Corn Masa harina de maíz azul (blue corn masa harina)
  • 1¼ to 1½ cups (300-360ml) — adjust for perfect dough Agua tibia (warm water)
  • ½ tsp Sal (optional)

Method

  1. In a large bowl, combine blue corn masa harina and salt (if using). Gradually add warm water while mixing with your hands.
  2. Knead for 3-5 minutes until smooth, soft, and pliable — the dough should feel like soft playdough. Blue corn masa can be slightly drier, so add water slowly until it holds together without cracking.
  3. Cover with a damp cloth and rest for 10-15 minutes to fully hydrate the corn.
  4. Divide into 12-16 equal balls (golf ball size). Keep covered.
  5. Heat a comal or cast-iron skillet over medium-high (no oil).
  6. Line a tortilla press with two sheets of plastic or parchment. Place one ball in center, cover, and press firmly into a 5-6 inch circle (thin, about ⅛-inch thick). If no press, roll between plastic with a rolling pin.
  7. Carefully peel off plastic and place on hot comal.
  8. Cook 30-60 seconds per side until edges lift and light brown spots appear (they puff beautifully). Blue corn tortillas may take 10-15 seconds longer due to density.
  9. Stack in a clean kitchen towel or tortilla warmer to keep soft and steamy.
  10. Serve warm for tacos, enchiladas, or with any filling. Store cooled in zip-top bag at room temp 1 day, fridge 5 days, or freeze 2-3 months. Reheat on dry comal or microwave with damp towel.
