Ingredients
- 1 sheet Shortcrust pastry
- 150g Pineapple chunks
- 200g Fermented bean sprouts
- 2 tbsp Soy sauce
- 30g Brown sugar
- 1 tbsp Sesame oil
- 1 tsp Ginger, grated
- 1 tsp Garlic, minced
- 1/2 tsp Red chili flakes
- 2 tbsp Fresh cilantro
- 2 Lime wedges
Method
- Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
- Roll out the shortcrust pastry on a lightly floured surface, then cut into 5 equal circles, each about 8 cm in diameter.
- Place each pastry circle onto the prepared baking sheet, pressing gently into a tart pan to form a shallow base.
- Bake the pastry shells for 10 minutes until they are lightly golden, then remove and let them cool slightly.
- In a skillet, heat sesame oil over medium heat, then add the minced garlic and grated ginger, sautéing until fragrant, about 1 minute.
- Add the fermented bean sprouts to the skillet, stirring to coat them in the aromatics, and cook for 3–4 minutes until they begin to soften.
- Stir in the soy sauce, brown sugar, and red chili flakes, cooking for an additional 2 minutes until the mixture is glossy and the flavors are well blended.
- Spread a thin layer of the bean sprout mixture onto each cooled pastry shell, leaving a small border around the edge.
- Arrange pineapple chunks on top of the bean sprout layer, then drizzle each tart with a small amount of soy sauce for a savory-sweet glaze.
- Return the tarts to the oven and bake for an additional 8–10 minutes, watching closely until the pineapple is caramelized and the pastry edges are crisp.
- Remove from the oven, let them cool for 5 minutes, then garnish each tart with fresh cilantro and a squeeze of lime juice.
- Serve warm as a party snack, offering guests the option to dip the tart into a small bowl of sweet chili sauce for extra heat.
