Ingredients

  • 4 Gluten-free bread slices
  • 1 cup Coconut milk
  • 1/2 cup Coconut sugar
  • 1 tsp Cardamom pods, crushed
  • 1 Cinnamon stick
  • 1/4 tsp Salt
  • 1 tbsp Vegetable oil
  • 1 tsp Fresh lime zest

Method

  1. In a saucepan, combine the coconut milk, coconut sugar, crushed cardamom pods, cinnamon stick, and salt, heating over medium-low heat until the sugar fully dissolves, stirring occasionally for 5 minutes.
  2. Remove the saucepan from heat and let the mixture steep for 10 minutes, then strain to remove the spices, leaving a fragrant coconut syrup.
  3. Heat a non-stick skillet over medium heat, adding the tablespoon of vegetable oil and swirling to coat the pan.
  4. Pour a thin layer of the coconut syrup onto the skillet, spreading it evenly to form a thin glaze, cooking for 2-3 minutes until the bottom sets and the surface turns slightly golden.
  5. Place two slices of gluten-free bread onto the glaze, pressing gently to adhere, and cook for 4-5 minutes on each side, or until both sides are crisp and the glaze has caramelized into a glossy coating.
  6. Repeat the glazing and toasting process with the remaining bread slices.
  7. Once all slices are toasted, spread the remaining coconut syrup over the top of each slice, then sprinkle with fresh lime zest for a bright citrus contrast.
  8. Serve the kaya toast slices warm, optionally accompanied by a side of vegan butter or a splash of fresh lime juice for added depth.
