Ingredients

  • 500 ml White vinegar (5% acidity)
  • 200 ml Lemon or lime juice (fresh)
  • 1–2 tsp Citric acid powder (optional boost)
  • 1–2 tsp Salt
  • garlic, rosemary, chili flakes Optional herbs/spices

Method

  1. In clean glass jar, combine vinegar + fresh lemon/lime juice → add citric acid + salt → stir until dissolved.
  2. Optional: add herbs/spices for flavor → let infuse 24–48 hours.
  3. Strain if using herbs → pour into sterilized bottle → seal tightly.
  4. Store in cool dark place or refrigerator up to 6 months.
  5. Use as pickling brine, marinade, or add small amounts to sauces/soups to lower pH and inhibit bacteria.
  6. Note: This is a natural acid-based preservative → not a substitute for proper canning/heat processing.
  7. Makes 700 ml — simple, natural preservative using kitchen acids.
