Ingredients
- 1 can (400g) Canned chickpeas (drained)
- ½ cup Brown rice (dry)
- 2 cups chopped Mixed veggies (bell peppers, corn, tomatoes)
- ½ Avocado
- juice of 1 lime Lime juice
- 1 tsp each Cumin + chili powder
- 1 tbsp Olive oil
- to taste Salt + pepper
Method
- Cook brown rice in 1 cup water, 20–25 min until fluffy.
- Sauté veggies in olive oil 5–7 min. Add chickpeas, cumin, chili powder, salt/pepper. Cook 3–4 min more.
- Slice avocado. Squeeze lime over everything.
- Layer rice, chickpea-veggie mix, and avocado in bowl.
- Serve warm or cold — fresh, filling burrito-style bowl Zendaya loves as comfort food.
