Ingredients

  • 30g oval mound Sushi rice
  • 1 (2cm x 15cm) Nori strip
  • heaping tablespoon Salmon roe (ikura)
  • tiny dab optional Wasabi
  • dipping Soy sauce

Method

  1. Prepare sushi rice as standard – perfectly seasoned and cooled.
  2. Wet hands with vinegar water, form rice into a firm oval mound about 4cm long x 3cm wide x 2cm high.
  3. Wrap nori strip vertically around rice mound, overlapping slightly; seal with a grain of rice to form a 'battleship' wall about 1cm higher than rice.
  4. Ensure nori seam is at back for clean presentation.
  5. Place small dab of wasabi on rice if desired.
  6. Carefully spoon marinated salmon roe into nori cup, piling high so eggs glisten.
  7. Serve immediately – eggs should burst in mouth with briny pop against vinegared rice.
