Ingredients

  • 3 kg Pork shoulder
  • 150g Achiote paste
  • 300ml Sour orange juice
  • marinade Garlic & oregano
  • wrapping Banana leaves
  • habanero Pickled red onion
  • serving Corn tortillas

Method

  1. Blend achiote with sour orange, garlic, spices.
  2. Marinate pork overnight.
  3. Wrap tightly in banana leaves.
  4. Slow-roast in pit or oven 4-6 hours at low temp.
  5. Shred tender meat.
  6. Serve with pickled onions, tortillas.
  7. Mayan peninsula signature.
