- 200g Eggplant
- 150g Okra
- 150g Bitter melon
- 150g String beans
- 200g Squash
- 100g Tomatoes

Method
- In a pot, heat a little oil. Sauté chopped onion, garlic, and tomatoes until soft.

- Layer the vegetables: start with harder ones like squash at the bottom, then eggplant, bitter melon, string beans, and okra on top. Add a splash of water if needed.
- Cover and simmer on low heat for 10-15 minutes without stirring much (to keep veggies intact).
- Gently mix once vegetables are tender. Season with salt if needed.
- Serve hot with cooked rice.
