Ingredients

  • 500 g Chicken breast
  • 3 tbsp Peanut butter
  • 100 ml Coconut milk
  • 2 tbsp Soy sauce
  • 1 tbsp Brown sugar
  • 2 Garlic cloves, minced
  • 1 Lemongrass stalk, crushed
  • 1 tsp Red chili flakes
  • 1 tsp Salt
  • 8 Wooden skewers, soaked

Method

  1. Heat a grill pan over medium-high heat until shimmering, about 2 minutes, then brush with a little oil to prevent sticking.
  2. In a bowl, whisk together peanut butter, coconut milk, soy sauce, brown sugar, minced garlic, crushed lemongrass, chili flakes, and salt until smooth, about 2 minutes.
  3. Cut the chicken breast into 2 cm thick strips and marinate in the peanut sauce for at least 30 minutes, turning occasionally to coat evenly.
  4. Thread the marinated chicken onto soaked wooden skewers, packing tightly but leaving a little space for heat to circulate.
  5. Place the skewers on the preheated grill pan and cook 4–5 minutes per side, turning once, until the chicken is cooked through and slightly charred, juices running clear.
  6. Remove from heat and let rest for 2 minutes before serving with a side of cucumber salad and extra peanut sauce for dipping.
