Ingredients
- 200g Biscuit crumbs
- 100g Unsalted butter
- 50g Brown sugar
- 250g Fresh durian pulp
- 300g Cream cheese
- 150g Yogurt (fermented milk)
- 2 Eggs
- 1 tsp Vanilla extract
- 1 tsp Lemon zest
- 50g Shredded coconut
- 1/4 tsp Salt
Method
- Preheat the oven to 160°C (320°F) and line a 23cm springform pan with parchment paper.
- In a saucepan, melt the butter over low heat, then add the brown sugar and stir until the mixture is glossy and slightly caramelized, about 3 minutes.
- Fold in the biscuit crumbs and shredded coconut, mixing until the crumbs are evenly coated with the butter mixture.
- Press the crumb mixture into the bottom of the prepared pan, creating an even crust, then bake for 8 minutes, removing it to cool slightly.
- In a large bowl, beat the cream cheese until smooth and creamy, then add the fermented yogurt, eggs, vanilla extract, lemon zest, and a pinch of salt, mixing until fully incorporated.
- Fold in the fresh durian pulp gently, ensuring the texture remains silky and the flavor is not overwhelmed.
- Pour the durian cheesecake filling over the cooled crust, smoothing the top with a spatula.
- Bake the cheesecake at 160°C (320°F) for 45–50 minutes, checking that the center is set but still slightly jiggly.
- Remove from the oven and allow it to cool on a wire rack for 30 minutes, then chill in the refrigerator for at least 4 hours to set completely.
- Just before serving, toast the shredded coconut in a dry skillet over medium heat until golden brown, about 3 minutes, then sprinkle over the cheesecake for a crunchy finish.
- Serve chilled, offering guests a small side of fresh durian cubes for an extra burst of tropical flavor.
