Ingredients
- 300g All-purpose flour
- 180ml Water
- 30ml Milk
- 2 Eggs
- 50g melted Ghee or butter
- 1 tsp Salt
- 1 tbsp Sugar
- 1/2 tsp Cardamom powder
- 1 tsp Baking powder
- 30g Chopped nuts (optional)
Method
- In a large mixing bowl, combine the all-purpose flour, baking powder, salt, sugar, and cardamom powder, whisking them together to ensure even distribution of the dry ingredients.
- Create a well in the center of the dry mixture and add the milk, eggs, and melted ghee, then mix gently with a wooden spoon until a shaggy dough forms.
- Transfer the dough onto a lightly floured surface and knead for about 8 minutes until it becomes smooth, elastic, and slightly tacky, indicating proper gluten development.
- Cover the dough with a damp cloth and let it rest at room temperature for 30 minutes; this rest period allows the gluten to relax and the dough to rise slightly, improving the final texture.
- Divide the rested dough into 4 equal portions, rolling each into a ball; cover the balls with a clean towel to prevent drying out during the cooking process.
- Heat a non-stick skillet over medium-high heat, then place a rolled-out dough circle onto the skillet, cooking for 1-2 minutes until the bottom shows light brown spots and bubbles form on the surface.
- Flip the roti, brush the cooked side with a thin layer of ghee, then flip again and cook the other side for another 1-2 minutes until golden brown and puffed.
- Repeat the rolling and cooking steps for the remaining dough balls, stacking the finished roti on a plate and covering them with a kitchen towel to keep them warm.
- Serve the roti prata warm, accompanied by a side of sweetened condensed milk or a spicy curry dip, allowing diners to enjoy the contrast between the crisp, buttery bread and flavorful sauces.
