Ingredients
- 300g Rolled oats
- 120g Honey or maple syrup
- 150g Peanut butter or almond butter
- 60g Coconut oil
- 1 tsp Vanilla extract
- 1/4 tsp Salt
- 100g Dried cranberries or raisins
- 80g Chopped nuts (almonds, walnuts)
Method
- Line an 20x20cm baking pan with parchment paper, leaving overhang for easy removal.
- In a large bowl, combine rolled oats, dried fruit, and chopped nuts.
- In a small saucepan over medium heat, melt coconut oil, honey (or maple syrup), peanut butter, vanilla extract, and salt. Stir until smooth and fully combined.
- Pour the wet mixture over the dry ingredients. Mix thoroughly until everything is evenly coated.
- Press the mixture firmly and evenly into the prepared pan using the back of a spoon or your hands (it helps to slightly wet your hands).
- Refrigerate for at least 1 hour or until fully set.
- Lift out using parchment overhang, then cut into 12-16 bars. Store in an airtight container in the fridge for up to 2 weeks.
