Ingredients
- 120 ml Soy sauce
- 120 ml White vinegar (cane or coconut)
- 8–10 cloves minced Garlic
- 3–4 Bay leaves
- 1 tsp (cracked) Black peppercorns
- 1–2 tsp (optional) Sugar
- 120 ml (optional for thinner sauce) Water
Method
- In bowl or jar combine soy sauce + vinegar + minced garlic + bay leaves + cracked peppercorns + sugar.
- Stir until sugar dissolves → taste & adjust (should be salty, tangy, garlicky).
- Use immediately as marinade (for chicken, pork, tofu) — marinate 2–24 hours in fridge.
- For sauce: simmer mixture with 120 ml water 10–15 minutes → reduce slightly → remove bay leaves.
- Cool → store refrigerated up to 2 weeks.
- Classic Filipino adobo marinade/sauce — use for adobo stew, grilled meats, or dipping.
