Ingredients
- 120 ml Soy sauce
- 120 ml Cane vinegar or white vinegar
- 8–10 cloves minced Garlic
- 3–4 Bay leaves
- 1 tsp cracked Black peppercorns
- 1–2 tbsp Brown sugar
- 120 ml (optional for thinner) Water
Method
- In bowl combine soy sauce + vinegar + minced garlic + bay leaves + cracked peppercorns + brown sugar.
- Stir until sugar dissolves → taste & adjust (should be salty, tangy, garlicky with slight sweetness).
- Use immediately as marinade for chicken, pork, tofu (marinate 2–24 hours in fridge).
- For sauce/stew base: simmer mixture with meat/vegetables + optional water 30–60 minutes until reduced and flavorful.
- Remove bay leaves → cool → store refrigerated up to 2 weeks.
- Classic Filipino adobo sauce — use for adobo stew, grilled meats, or as dipping sauce.
