Ingredients
- 2 cups Beans
- 1 medium Onion
- 1 tsp Salt
- 1/2 cup Vegetable oil
- 1/2 tsp Pepper
Method
- Rinse the beans and soak them in water for at least 8 hours or overnight, then drain and peel the skin off the beans.
- Heat oil in a heavy skillet over medium-high until shimmering, about 2 minutes, then add onion and cook stirring occasionally until golden-brown, 6–8 minutes.
- Add the beans to a blender or food processor and blend until smooth, adding a little water if necessary to achieve the right consistency.
- Heat the oil in a deep frying pan over medium heat, about 325°F, then using a spoon, drop small amounts of the bean mixture into the oil and fry until golden brown, about 3-4 minutes on each side.
- Remove the akara from the oil with a slotted spoon and drain on paper towels, serving hot with your choice of sauce or stew.
- Repeat the process until all the bean mixture is used up, adjusting the heat as necessary to prevent burning, and serve immediately.
