Ingredients
- 1 cup Heavy cream
- 1/2 cup Granulated sugar
- 1 cup Mango puree
- 1/4 cup Unsalted butter
- 2 Large eggs
- 1 tsp Vanilla extract
Method
- In a large bowl, whip heavy cream until stiff peaks form, about 5 minutes, using an electric mixer or a whisk.
- In a separate bowl, mix together granulated sugar, mango puree, and unsalted butter, until well combined, then beat in large eggs, one at a time, until smooth and creamy.
- Stir in vanilla extract, then fold the mango mixture into the whipped cream, until no white streaks remain, about 2 minutes, using a rubber spatula or a whisk.
- Spoon the mango fool into individual serving cups or a large serving dish, then refrigerate for at least 2 hours, or overnight, to allow the flavors to meld together.
- Just before serving, garnish with sliced mango or a sprinkle of sugar, if desired, then serve chilled, which will help the flavors to remain fresh and the texture to remain light and airy.
- Cover and refrigerate any leftovers for up to 24 hours, which will help to keep the mango fool fresh and the flavors to remain vibrant.
