Ingredients

  • 1½ scoops (~45g) Unflavored whey isolate (premium)
  • 8 large Egg whites
  • ⅓ cup (~35g) Almond flour
  • 150g A5 Miyazaki Wagyu (finely minced)
  • 100g Fresh matsutake mushrooms (thinly sliced)
  • 1 tsp White truffle oil
  • 1½ tsp Baking powder
  • 3–4 tbsp Unsweetened almond milk
  • for garnish Micro shiso & edible flowers
  • to taste Salt + white pepper

Method

  1. Whip egg whites to extremely stiff peaks.
  2. Gently mix almond flour, protein powder, baking powder, salt/pepper, truffle oil and ½ the wagyu/matsutake into a batter. Fold in egg whites in 3 careful additions.
  3. Preheat waffle iron to medium-high. Lightly grease.
  4. Pour batter for thick, tall waffles. Cook 6–8 minutes until golden and crisp.
  5. Quickly sear remaining wagyu and matsutake in a hot pan 45–60 seconds (keep rare/aromatic).
  6. Stack 2–3 waffles per serving into a tower. Top with seared wagyu & matsutake, micro shiso, edible flowers, and a final drizzle of white truffle oil.
  7. Serve immediately as a breathtaking savory brunch masterpiece.
