Ingredients

  • 1 part / 30 g Baking soda (sodium bicarbonate)
  • 2 parts / 60 g Cream of tartar (potassium bitartrate)
  • 1 part / 30 g Cornstarch (optional stabilizer)

Method

  1. Measure ingredients accurately (ratio 1:2:1 baking soda : cream of tartar : cornstarch).
  2. Sift baking soda + cream of tartar + cornstarch together 2–3 times through fine sieve to ensure even mixing and remove lumps.
  3. Whisk thoroughly in bowl for uniform distribution.
  4. Store in airtight container in cool dry place — use within 6 months (loses potency over time).
  5. Use immediately in recipes calling for single-acting baking powder (activates with liquid/acid).
  6. Test: mix 1 tsp with hot water — should fizz vigorously.
  7. Makes ≈120 g — homemade aluminum-free baking powder for biscuits, pancakes, cakes.
