Ingredients
- 1.5 lbs Grilled Chicken Breast
- 4 cups Mixed Greens
- 2 cups Cherry Tomatoes
- 1 cup Red Onion
- 1 cup Avocado
- 1/4 cup Cilantro
- 2 tbsp Lime Juice
- 1 tbsp Olive Oil
- 1/4 cup Diced Jalapeño
Method
- Preheat grill to medium-high heat, about 400°F, then season chicken breast with salt and pepper and grill for 6-8 minutes per side, or until cooked through.
- Heat oil in a large bowl over low heat, about 200°F, then add diced red onion and cook stirring occasionally until translucent, 4-6 minutes.
- Add mixed greens, cherry tomatoes, and cilantro to the bowl and toss to combine, making sure all ingredients are well coated with the onion and oil mixture.
- In a small bowl, whisk together lime juice and a pinch of salt, then pour over the salad and toss to coat.
- Slice the grilled chicken into thin strips and add to the salad, tossing gently to combine, making sure all the ingredients are well coated with the chicken and lime mixture.
- Add diced avocado to the salad and toss gently to combine, making sure not to mash the avocado, this will help to keep the salad fresh and creamy.
- Season with salt and pepper to taste, then garnish with diced jalapeño and serve immediately, this will add a spicy kick to the salad.
