Ingredients
- 1 cup Low-fat cottage cheese
- 5 large Egg whites
- ½ cup Canned pumpkin puree (pure, no sugar)
- ⅓ cup (~35g) Oat flour
- 1 scoop (~30g) Protein powder (vanilla or cinnamon)
- 1 tsp Baking powder
- 1 tsp Pumpkin pie spice
- ½ tsp Cinnamon
- pinch Salt
Method
- Add cottage cheese, egg whites, pumpkin puree, protein powder, oat flour, baking powder, pumpkin pie spice, cinnamon, and salt to a blender. Blend until completely smooth.
- Let batter rest 5–10 minutes (it will thicken slightly).
- Heat a non-stick pan over medium-low. Lightly grease if needed.
- Pour ¼ cup batter per pancake. Cook 2–3 minutes until bubbles form and edges look set.
- Flip gently and cook another 1–2 minutes until golden underneath.
- Serve with sugar-free maple syrup, a dollop of Greek yogurt, or extra cinnamon on top.
