Ingredients
- 4–10 (adjust heat) Bird’s eye chilies
- 4 cloves Garlic
- 2–3 tbsp Palm sugar
- 3 tbsp Fish sauce
- 4–5 tbsp Lime juice (fresh)
- 1 tbsp pounded Dried shrimp (optional)
- 2 tbsp Roasted peanuts (crushed)
Method
- In mortar & pestle: pound garlic + chilies + pinch salt to coarse paste.
- Add palm sugar → pound until dissolved.
- Add dried shrimp (if using) → pound lightly.
- Add fish sauce + lime juice → stir/pound to combine → taste & adjust balance (should be spicy, sour, salty, sweet).
- Stir in crushed peanuts at the end (for texture).
- Use immediately as dressing for shredded green papaya, long beans, tomato, dried shrimp salad.
- Store refrigerated up to 3–4 days (flavor best fresh) — classic pounded Thai som tam sauce.
