Ingredients
- 2 scoops (~60g) Vanilla whey or plant protein powder
- 6 large Egg whites
- ½ cup (~50g) Oat flour
- 2 tsp Matcha powder (culinary grade)
- 1 tsp Baking powder
- ¼–⅓ cup Unsweetened almond milk
- to taste (optional) Stevia or sweetener
- pinch Salt
Method
- In a bowl, whisk together protein powder, oat flour, matcha powder, baking powder, and a pinch of salt.
- Add egg whites and almond milk. Mix until smooth and no lumps remain. Batter should be thick but pourable — adjust milk as needed. (Matcha can make batter slightly thicker.)
- Let batter rest 5–10 minutes (helps matcha flavor bloom and pancakes rise better).
- Heat a non-stick pan or griddle over medium-low heat. Lightly grease with cooking spray.
- Scoop ¼ cup batter per pancake. Cook 2–3 minutes until bubbles appear on surface and edges look set.
- Flip carefully and cook another 1–2 minutes until golden underneath.
- Serve hot with sugar-free syrup, fresh strawberries, or a dusting of extra matcha powder.
