Ingredients

  • 4 lbs Pork bones
  • 2 lbs Chicken bones
  • 2 Onion
  • 3 cloves Garlic
  • 2 inches Ginger
  • 1/4 cup Soy sauce
  • 1/4 cup Sake
  • 2 tbsp Mirin
  • 1 package Noodles

Method

  1. Heat pork bones in a 400°F oven for 30 minutes, or until nicely browned.
  2. In a large pot, combine roasted pork bones, chicken bones, onion, garlic, and ginger, then add 4 quarts of water and bring to a boil over high heat.
  3. Reduce heat to low and simmer, skimming foam occasionally, for at least 4 hours, or overnight, until the broth is rich and creamy.
  4. Strain the broth through a fine-mesh sieve into a clean pot, discarding the solids.
  5. Add soy sauce, sake, and mirin to the broth, then bring to a simmer over medium heat and cook until the flavors have melded together, about 10 minutes.
  6. Cook noodles according to the package instructions, then divide among bowls.
  7. Slice pork loin into thin strips and add to the bowls, along with green onions, bean sprouts, and a soft-boiled egg.
  8. Serve the hot broth over the noodles and toppings, garnished with additional green onions and grated ginger if desired.
