Ingredients
- 1 small handful (20g) Sushi rice
- 1 piece (30g, sashimi-grade) Fresh salmon (sake) slice
- small dab Wasabi
- dipping Soy sauce
- cleanser Gari
Method
- Rinse and cook sushi rice as above, seasoning carefully to balance the fatty salmon.
- Select bright orange salmon fillet; slice at a 30-degree angle for a wider, thinner piece that covers the rice mound elegantly.
- Wet hands, form rice into a firm but loose oblong, about 5cm long.
- Apply wasabi to the salmon's underside to complement its richness without overpowering.
- Drape salmon over rice, using fingers to shape it gently to the curve of the mound.
- Present with accompaniments; dip lightly in soy, fish side first, to avoid soggy rice.
- Enjoy the melt-in-mouth texture of salmon against vinegared rice.
