Ingredients

  • 2 kg cut into chunks Pork shoulder
  • 500g for frying Lard or oil
  • 200ml Orange juice
  • juice of 4 Limes
  • 6 whole Garlic cloves
  • 2 Bay leaves
  • 1 tsp Cumin
  • 1 tsp Oregano
  • to taste Salt
  • 12 Corn tortillas
  • chopped Onion & cilantro
  • for serving Salsa verde

Method

  1. Prepare pork: Cut into large chunks, season with salt, cumin, oregano.
  2. Simmer: In large pot, add pork, orange juice, lime juice, garlic, bay leaves, cover with water; bring to boil, reduce to simmer uncovered 2-3 hours until tender and liquid evaporates.
  3. Fry carnitas: Add lard to pot, increase heat, fry pork chunks until crispy golden exterior, turning occasionally for even browning, about 30 minutes.
  4. Shred or chop: Remove from pot, let rest, then shred or chop into bite-size pieces.
  5. Warm tortillas: Heat on comal until soft.
  6. Assemble: Fill tortillas with carnitas, top with onion-cilantro.
  7. Serve with salsa verde and lime – Michoacán's crispy-tender pride.
