Ingredients

  • 200 g Ground pork
  • 150 g All-purpose flour
  • 75 ml Water, lukewarm
  • 2 tbsp Olive oil
  • 3 tbsp BBQ sauce
  • 1 tsp Garlic, minced
  • 1 tbsp Onion, finely chopped
  • 1 tbsp Coriander leaves, chopped
  • 1 tsp Salt

Method

  1. In a large bowl, combine the ground pork with minced garlic, chopped onion, salt, and 1 tablespoon of olive oil, mixing until the pork is evenly seasoned.
  2. Gradually add the lukewarm water to the pork mixture while kneading, creating a smooth and elastic dough that holds together.
  3. Cover the dough with a damp cloth and let it rest for 15 minutes, allowing the gluten to relax.
  4. Meanwhile, whisk the flour into a separate shallow bowl, creating a dusting surface for rolling.
  5. Divide the rested dough into 4 equal portions, rolling each into a ball.
  6. On a floured surface, roll each dough ball into a thin circle, about 10 cm in diameter, ensuring it is not too thick to avoid tearing.
  7. Heat a non-stick skillet over medium heat and brush with a light coat of olive oil.
  8. Place one rolled dough circle onto the skillet, cooking for 1-2 minutes until bubbles form on the surface, then flip and cook the other side for another minute.
  9. Transfer the cooked roti to a plate and brush generously with BBQ sauce, allowing it to seep into the folds.
  10. Repeat the process for the remaining dough circles, stacking them with more BBQ sauce between each layer.
  11. Serve the BBQ pork roti prata warm, accompanied by a side of pickled vegetables or a simple cucumber salad.
