Ingredients
- 1 cup Almond flour
- 3 Eggs
- 2 Egg whites
- 1/4 cup Kaya jam (low sugar)
- 1/4 cup Coconut milk
- 1 tsp Baking powder
- 1/4 tsp Salt
- 1 tsp Vanilla extract
Method
- Preheat the oven to 180°C and line a 6-inch cake tin with parchment paper, lightly greasing the edges.
- In a large bowl, whisk the eggs and egg whites together until frothy, then fold in the vanilla extract.
- Sift the almond flour, baking powder, and salt into the egg mixture, mixing gently until a smooth batter forms.
- Fold in the low-sugar kaya jam and coconut milk, ensuring the mixture is uniform and free of lumps.
- Pour the batter into the prepared tin, smoothing the top with a spatula.
- Bake for 25–30 minutes, or until the cake rises, the edges pull away from the tin, and a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely before slicing.
