Ingredients
- 1 cup Jasmine rice
- 1 cup Coconut milk
- 1 cup Water
- 1/2 tsp Salt
- 2 Lime leaves
- 1/4 cup Crushed peanuts
- 1/4 cup Crispy anchovies
- 2 Hard-boiled eggs
- 1/2 cup Sliced cucumber
- 2 tbsp Sambal chili paste
- 1 tbsp Vegetable oil
Method
- Rinse 1 cup jasmine rice under cold water until the water runs clear, then drain thoroughly.
- In a saucepan, combine the rinsed rice, 1 cup coconut milk, 1 cup water, 1/2 tsp salt, and 2 lime leaves; bring to a boil over high heat, then reduce to low, cover, and simmer for 15 minutes until the liquid is absorbed and the rice is fluffy.
- While the rice cooks, heat 1 tbsp vegetable oil in a small pan over medium heat, add crushed peanuts, and stir until fragrant and lightly toasted, about 3 minutes.
- Separately, sauté sliced cucumber in a dry skillet for 1 minute to slightly soften the crunch.
- Arrange the cooked rice on plates, top with sliced cucumber, chopped peanuts, crispy anchovies, and sliced hard-boiled eggs.
- Serve with a generous spoonful of sambal chili paste and a wedge of lime for extra zest.
