Ingredients
- 1 cup Durian pulp
- 1/2 cup Low-fat Greek yogurt
- 3 Egg whites
- 2 tbsp Chia seeds
- 1 tbsp Stevia syrup
- 1 tsp Vanilla extract
Method
- Heat a medium saucepan over low heat and pour in the durian pulp, stirring continuously until it reaches a smooth consistency, about 3–4 minutes, ensuring no lumps form.
- Add the low-fat Greek yogurt to the saucepan and whisk vigorously until fully incorporated, then remove from heat.
- In a separate bowl, beat the egg whites until soft peaks form, then fold them into the durian mixture gently to maintain volume.
- Stir in the chia seeds and vanilla extract, allowing the mixture to sit for 5 minutes so the seeds absorb moisture and thicken.
- Pour the pudding into two heatproof ramekins, cover each with foil, and place them in a preheated oven at 160°C for 20 minutes, checking that the edges are set but the center remains slightly jiggly.
- Remove from the oven, let cool to room temperature, then refrigerate for at least 2 hours before serving, optionally garnishing with a sprinkle of fresh durian flesh or a dash of stevia syrup.
