Ingredients

  • 2 legs (300g) Fresh crab legs
  • 1 cup Coconut milk
  • 2 tbsp Tomato paste
  • 1 tbsp Red chili paste
  • 3 cloves, minced Garlic
  • 1 tbsp, grated Ginger
  • 1 tbsp Soy sauce
  • 1 tsp Brown sugar
  • 2 stalks, sliced Spring onions
  • 1, juiced Lime
  • 2 tbsp Oil
  • 1 tsp Salt

Method

  1. Heat a wide skillet over medium-high heat, adding the oil until it starts to shimmer, about 30 seconds.
  2. Add the minced garlic and grated ginger to the skillet, sautéing until fragrant and lightly golden, approximately 1 minute.
  3. Stir in the tomato paste, red chili paste, and soy sauce, cooking for another 2 minutes until the mixture thickens slightly.
  4. Pour in the coconut milk, bringing the sauce to a gentle simmer, and let it reduce for 5 minutes, stirring occasionally to prevent sticking.
  5. Add the brown sugar and salt, adjusting the seasoning to taste, and continue simmering for an additional 3 minutes until the sauce thickens to a glossy consistency.
  6. Gently place the crab legs into the simmering sauce, turning them to coat evenly, and cook for 6-8 minutes, ensuring the crab meat turns opaque and is cooked through.
  7. Squeeze fresh lime juice over the crab, giving the dish a bright citrus note, and stir to combine.
  8. Remove the skillet from heat and transfer the crab legs to a serving platter, pouring the remaining sauce over them.
  9. Garnish with sliced spring onions, a sprinkle of chili flakes for extra heat, and a few lime wedges on the side.
  10. Serve the Chili Crab with steamed buns or plain rice, allowing the child to dip the crab into the savory sauce without any overwhelming heat.
