Ingredients

  • 250 g All-purpose flour
  • 150 g Butter (cold, cubed)
  • 150 g Alpine cheese (e.g. Gruyère or Sbrinz, finely grated)
  • 1 Egg yolk
  • ½ tsp Salt
  • 1 tsp Paprika powder (sweet)
  • 1 tsp Caraway seeds (optional)
  • 2–3 tbsp (if needed) Cold water

Method

  1. Step 1: In bowl, rub cold butter into flour until crumbly (like coarse sand).
  2. Step 2: Add grated cheese, salt, paprika, caraway. Mix well.
  3. Step 3: Add egg yolk and mix. If dough is too dry, add cold water 1 tbsp at a time until it just comes together (do not overwork).
  4. Step 4: Form into disk, wrap, and chill 30–60 min.
  5. Step 5: Preheat oven to 180°C (350°F). Line baking sheet with parchment.
  6. Step 6: Roll dough to 4–5 mm thick. Cut into rounds, rectangles, or shapes with cutter.
  7. Step 7: Place on sheet. Bake 12–15 min until golden. Cool on rack – savory, cheesy, crunchy Alpine cookies!
