Ingredients

  • 4 Large eggs
  • 500 ml Whole milk
  • 80–100 g (adjust sweetness) Sugar
  • 1 tsp Vanilla extract
  • pinch (for topping) Nutmeg or cinnamon

Method

  1. Preheat oven to 150°C (300°F).
  2. Heat milk + sugar in saucepan over medium until sugar dissolves and milk is steaming (do not boil) → remove from heat → stir in vanilla.
  3. Whisk eggs gently in large bowl (avoid too much air).
  4. Slowly pour warm milk mixture into eggs while whisking constantly (tempering) → strain through fine sieve into pitcher (removes bubbles).
  5. Pour custard into 4–6 ramekins or baking dish → skim any foam off top.
  6. Place ramekins/dish in deep roasting pan → add hot water halfway up sides (water bath).
  7. Bake 35–50 min (until set but center still jiggles slightly) → remove from water bath → cool to room temperature → chill 2+ hours.
  8. Dust with nutmeg/cinnamon → serve chilled or room temp — silky smooth egg custard.
