Braised Beef Braciole

Ingredients
- 1.5 lbs beef top round
- 1 large onion
- 3 cloves garlic
- 2 large carrots
- 2 stalks celery
- 2 cups canned crushed tomatoes
- 1 cup red wine
- 1 cup beef broth
- 1 tsp dried basil
- 1 tsp dried oregano
Method
- Preheat the oven to 300°F (150°C), then season the beef with salt and pepper.
- Heat oil in a large Dutch oven over medium-high until shimmering, about 2 minutes, then add beef and cook until browned on all sides, 5–6 minutes.
- Remove the beef from the pot and set aside, then add onion, garlic, carrots, and celery, and cook stirring occasionally until the vegetables are tender, 8–10 minutes.
- Add crushed tomatoes, red wine, beef broth, basil, and oregano, scraping up any browned bits from the bottom of the pot, then bring to a boil and cook until the liquid has reduced by half, 10–12 minutes.
- Return the beef to the pot, cover, and transfer to the preheated oven, then braise until the beef is tender and the sauce has thickened, 2 1/2 to 3 hours.
- Remove the pot from the oven and let it cool slightly, then slice the beef against the grain and serve with the sauce spooned over the top.
- Serve with crusty bread or over rice or pasta, garnished with fresh parsley or basil.
- Let it rest for 10 minutes before slicing and serving, to allow the juices to redistribute.
- Slice the beef into thin strips and serve with the sauce and vegetables.
