Ingredients
- 2 cups All-purpose flour
- 1/4 cup Lard or vegetable shortening
- 1 tsp Granulated sugar
- 1/4 tsp Salt
- 2 Large eggs
- 1 tsp Vinegar
- 1 1/2 cups Ricotta cheese
- 1 cup Confectioners' sugar
- 1 cup Chocolate chips
Method
- To make the shells, combine the flour, lard or shortening, sugar, and salt in a bowl, then add the eggs, vinegar, and 1 tablespoon of water, and mix until a dough forms, about 5 minutes.
- Knead the dough for 10 minutes, then cover and let rest for 30 minutes, then divide into 4 equal pieces and roll out each piece into a thin sheet, about 1/16 inch thick.
- Heat the oil in a deep frying pan to 375°F, then fry the shells until golden brown, about 2-3 minutes on each side, then remove with a slotted spoon and drain on paper towels.
- To make the filling, beat the ricotta cheese in a bowl until smooth, about 2 minutes, then add the confectioners' sugar and chocolate chips, and beat until well combined, about 1 minute.
- Fill the shells with the ricotta mixture and serve, traditionally with a dusting of confectioners' sugar and a side of sweetened coffee or tea.
- To make the sweet bread, combine 1 cup of flour, 1/2 cup of sugar, and 1/4 teaspoon of salt in a bowl, then add 1/2 cup of milk and 1 large egg, and mix until a dough forms, about 5 minutes.
- Knead the dough for 10 minutes, then cover and let rest for 30 minutes, then shape into a round loaf and bake in a preheated oven at 350°F for 25-30 minutes, or until golden brown.
