Ingredients
- 2 cups Yogurt
- 2 medium Cucumber
- 2 cloves Garlic
- 1/4 cup Dill
- 1/4 cup Walnuts
- 2 tbsp Vinegar
- 2 tbsp Olive oil
- 1 cup Water
- 1 tsp Salt
- 1 tsp Black pepper
Method
- Grate the cucumber using a box grater, then squeeze out the excess water using a cheesecloth or paper towels.
- In a blender or food processor, combine the grated cucumber, yogurt, garlic, dill, walnuts, vinegar, and olive oil, and blend until smooth.
- Strain the soup through a fine-mesh sieve into a large bowl, then season with salt and black pepper to taste.
- Chill the soup in the refrigerator for at least 2 hours, then serve cold, garnished with a sprinkle of dill and a dollop of sour cream.
