Ingredients
- 300 g chopped Dark chocolate (60–70% cocoa)
- 150 ml Heavy cream
- 30 g Unsalted butter
- 1 tsp Vanilla extract
- for coating Cocoa powder, chopped nuts, or melted chocolate
Method
- Chop chocolate finely → place in heat-safe bowl.
- Heat cream in saucepan until just simmering (do not boil) → pour over chopped chocolate → let sit 2 minutes.
- Stir gently from center outward until smooth and glossy → add butter + vanilla → stir until fully incorporated.
- Cool to room temperature → cover → refrigerate 2–4 hours until firm enough to scoop.
- Line tray with parchment → scoop ganache into 2–3 cm balls (use small cookie scoop or spoon) → roll quickly between palms → place on tray.
- Refrigerate balls 30 min to firm → roll again for smooth shape if needed.
- Coat: roll in cocoa powder, chopped nuts, or dip in tempered melted chocolate → place on parchment.
- Let set at cool room temp 1–2 hours → store in airtight container in fridge up to 2 weeks (bring to room temp before serving).
- Makes 30–40 truffles — rich, melt-in-mouth homemade chocolate truffles.
