Ingredients
- 2 scoops (~60g) Whey protein powder (vanilla or unflavored)
- 6 large Egg whites
- ½ cup (~50g) Oat flour (or blended oats)
- 1 tsp Baking powder
- ½ tsp Cinnamon
- pinch Salt
- ¼–⅓ cup (adjust for batter thickness) Unsweetened almond milk
Method
- In a bowl, whisk together whey protein powder, oat flour, baking powder, cinnamon, and a pinch of salt.
- Add egg whites and almond milk. Mix until smooth and no lumps remain. Batter should be thick but pourable — add a splash more milk if too thick.
- Let batter rest 5 minutes (helps protein powder hydrate and pancakes rise better).
- Heat a non-stick pan or griddle over medium-low heat. Lightly grease with cooking spray or a tiny bit of oil.
- Scoop ¼–⅓ cup batter per pancake. Cook 2–3 minutes until bubbles appear on surface and edges look set.
- Flip carefully and cook another 1–2 minutes until golden.
- Serve hot with sugar-free syrup, fresh berries, or Greek yogurt.
