Ingredients
- 1 lb Beef strips
- 1/4 cup Vegetable oil
- 2 medium Onion
- 2 tbsp Tomato paste
- 2 inches Ginger
- 3 cloves Garlic
- 2 cups Efo leaves
- 1 tsp Salt
- 1 tsp Black pepper
- 2 cups Water
Method
- Heat the oil in a large pot over medium heat until shimmering, about 2 minutes, then add the onion and cook, stirring occasionally, until softened, 5 minutes.
- Add the ginger and garlic and cook, stirring constantly, for 1 minute, until fragrant.
- Add the beef strips and cook, stirring occasionally, until browned, about 5-7 minutes.
- Add the tomato paste and cook, stirring constantly, for 1-2 minutes, until fragrant.
- Add the efo leaves, salt, and black pepper, and stir to combine, cooking for 2-3 minutes, until the leaves are wilted.
- Add the water and bring to a boil, then reduce the heat to low and simmer, covered, for 15-20 minutes, until the beef is tender and the sauce has thickened.
- Use a fork to check the tenderness of the beef, which should be easily shredded with a fork.
- Let the efo riro rest for 10-15 minutes before serving to allow the flavors to meld together.
