Ingredients

  • 1 lb 1 pound ground beef
  • 1 1 medium onion
  • 2 cloves 2 cloves garlic
  • 1 cup 1 cup diced tomatoes
  • 1 cup 1 cup kidney beans
  • 1 cup 1 cup beef broth
  • 1 tbsp 1 tablespoon chili powder
  • to taste Salt and pepper to taste

Method

  1. Start by heating oil in a large Dutch oven over medium-high until shimmering, about 2 minutes, then add onion and cook stirring occasionally until golden-brown, 6–8 minutes.
  2. Add garlic and cook for 1 minute, until fragrant, then add ground beef and cook until browned, breaking it up with a spoon as it cooks, about 5-7 minutes, then stir in chili powder and cook for 1-2 minutes, until fragrant.
  3. Add diced tomatoes, kidney beans, and beef broth to the pot, stirring to combine, then bring to a simmer and let cook for 20-25 minutes, stirring occasionally, until the flavors have melded together and the chili has thickened, then season with salt and pepper to taste.
  4. Reduce heat to low and let cook for an additional 10-15 minutes, stirring occasionally, until the chili has reached the desired consistency, then serve hot, garnished with chopped fresh cilantro and a sprinkle of shredded cheese, if desired.
  5. To make the dish more substantial, serve with a side of crusty bread, or a simple green salad with a light vinaigrette, and a sprinkle of queso fresco for added flavor and texture.
  6. For a spicy kick, add diced jalapenos or serrano peppers to the pot, and adjust the amount of chili powder to taste.
