Ingredients
- 1 cup Egusi seeds
- 1 medium Onion
- 1 tsp Salt
- 1/2 cup Vegetable oil
- 1/2 tsp Pepper
- 2 cups Water
Method
- Rinse the egusi seeds and soak them in water for at least 8 hours or overnight, then drain and blend into a smooth paste, adding a little water if necessary to achieve the right consistency.
- Heat oil in a heavy pot over medium heat, about 300°F, then add onion and cook stirring occasionally until softened, about 5 minutes.
- Add the blended egusi seeds to the pot, stirring to combine with the onion and oil, then add the salt, pepper, and water, bringing to a boil, then reducing the heat to low and simmering for about 20 minutes, or until the soup has thickened.
- Stir the soup occasionally as it cooks, adding more water if necessary to achieve the right consistency, and adjust the seasoning to taste, adding more salt or pepper if necessary.
- Serve the egusi soup hot, garnished with chopped vegetables or nuts if desired, and accompanied by a side of fufu or rice, if desired, for a filling breakfast meal.
- To add extra flavor to the soup, add a few drops of palm oil or other flavorings, such as dried fish or meat, if desired, and adjust to taste.
