Ingredients
- 2 cups All-purpose flour
- 1/2 cup Granulated sugar
- 1/4 cup Unsalted butter
- 2 Large eggs
- 1 cup Whole milk
- 1 cup Fresh fruit
- 1/4 cup Cinnamon sugar
Method
- In a medium bowl, whisk together flour and sugar, then set aside.
- In a large bowl, using an electric mixer, beat butter until creamy, about 2 minutes, then add eggs one at a time, beating well after each addition.
- Gradually add flour mixture to butter mixture, alternating with milk, beginning and ending with flour mixture, beating just until combined.
- Cover dough and let rest for 30 minutes, then divide into 8 equal pieces and roll each into a ball.
- Roll out each ball of dough into a thin circle, about 1/8 inch thick, then place a spoonful of fruit in center of each circle.
- Fold dough over filling and press edges together to seal, then use a fork to crimp edges and cut a slit in top of each empanada to allow steam to escape.
- Heat oil in a deep frying pan to 375°F, then fry empanadas until golden-brown, 2–3 minutes per side, then drain on paper towels and toss in cinnamon sugar to coat.
