Ingredients
- 1½ scoops (~45g) Unflavored whey isolate
- 8 large Egg whites
- 4 Egg yolks
- ⅓ cup (~35g) Almond flour
- 150g Fresh Hokkaido uni (sea urchin roe)
- 2–2½ tsp Handmade yuzu kosho paste
- 1½ tsp Baking powder
- ¼ tsp Cream of tartar
- 3–4 tbsp Unsweetened almond milk
- for garnish Micro shiso + edible flowers
- to taste Salt + white pepper
Method
- Whip egg whites + cream of tartar to extremely stiff peaks.
- Whisk yolks, protein powder, almond flour, baking powder, salt/pepper, yuzu kosho. Add almond milk.
- Fold whites into yolk mix in 3 gentle additions.
- Preheat waffle iron (medium). Lightly grease.
- Pour tall batter mounds to create dome-shaped waffles. Cook 7–9 minutes until puffed and golden.
- Plate as a dome stack. Top with fresh uni roe quenelles, micro shiso, edible flowers, and a whisper of extra yuzu kosho.
- Serve immediately as an exquisite savory luxury brunch dome.
