Ingredients
- ½ cup (~60g) Buckwheat flour (or oat flour)
- 1 scoop (~30g) Whey protein powder (unflavored)
- 4 large Egg whites
- 1 Egg (whole)
- ¾ cup Unsweetened almond milk
- ½ tsp Baking powder
- 100g sliced Smoked salmon (premium)
- 2–3 tsp Caviar
- ¼ cup Crème fraîche or Greek yogurt
- 2 tbsp chopped Fresh dill
- to taste Salt + black pepper
Method
- In a bowl, whisk buckwheat flour, protein powder, baking powder, and salt.
- In another bowl, whisk whole egg, egg whites, and almond milk. Combine wet and dry ingredients until just smooth (do not overmix).
- Let batter rest 10 minutes (buckwheat develops flavor).
- Heat non-stick pan over medium-low. Lightly grease.
- Pour 2–3 tbsp batter per blini (make small, thick rounds). Cook 2 minutes until bubbles appear and edges set.
- Flip and cook 1 minute more until golden.
- Cool slightly. Top each blini with a small dollop of crème fraîche/Greek yogurt, a slice of smoked salmon, a tiny spoonful of caviar, and fresh dill.
- Serve immediately as elegant canapés or a luxurious brunch stack.
