Ingredients

  • 4 Fish fillets
  • 1 cup Uncooked white rice
  • 1 large Onion
  • 2 tbsp Tomato paste
  • 1/4 cup Vegetable oil
  • 3 cloves Garlic
  • 1-inch piece Ginger
  • 1 tsp Salt
  • 1 tsp Black pepper

Method

  1. Rinse the rice in a fine-mesh strainer until the water runs clear, then drain and set aside.
  2. Heat oil in a heavy skillet over medium-high until shimmering, about 2 minutes, then add onion and cook stirring occasionally until golden-brown, 6–8 minutes.
  3. Add garlic and ginger to the skillet and cook, stirring constantly, for 1 minute, until fragrant.
  4. Add fish fillets to the skillet and cook, stirring occasionally, until browned on all sides, 8–10 minutes.
  5. Add tomato paste to the skillet and cook, stirring constantly, for 1 minute, until fragrant.
  6. Add rice to the skillet and cook, stirring constantly, for 2–3 minutes, until the rice is coated with the spice mixture.
  7. Add water to the skillet and bring to a boil, then reduce the heat to low, cover, and simmer for 20–25 minutes, until the rice is cooked and the liquid is absorbed.
