Ingredients
- 200g Pork cutlet
- 2 tbsp Curry roux
- 1 cup Rice
- 1 medium Onion
- 1 medium Carrots
- 1 cup Peas
- 1 tbsp Vegetable oil
- 2 cups Water
Method
- Heat oil in a heavy saucepan over medium heat until shimmering, then add onion and carrots and cook stirring occasionally until they start to soften, 5 minutes.
- Add peas and cook until they are tender, about 3-4 minutes.
- Add curry roux and cook stirring constantly for 1 minute, until fragrant and slightly darkened.
- Add water and bring to a boil, then reduce heat to low and simmer for 10 minutes, stirring occasionally, until the sauce thickens.
- Meanwhile, prepare the pork cutlet by seasoning with salt and pepper, then coat with flour, shaking off excess, and fry in a separate pan with 1/2 inch of oil over medium-high heat until golden brown and cooked through, about 4-5 minutes per side.
- Drain the pork on paper towels and slice into thin strips.
- To serve, place a scoop of cooked rice on a plate, add sliced pork, and spoon the curry sauce over the top, garnishing with chopped green onions if desired.
