Ingredients
- 1 cup Rice flour
- 1 cup Almond milk
- 2 tbsp Maple syrup
- 1 tsp Coconut oil
- 1/2 tsp Vanilla extract
- 1/4 tsp Salt
- 1 cup Fresh fruit
Method
- In a large bowl, whisk together rice flour, almond milk, and maple syrup until well combined, then let it sit for 10 minutes to allow the flour to absorb the liquid.
- Heat a non-stick waffle iron over medium heat, about 3-4 minutes, until it reaches the optimal temperature, then brush it with coconut oil to prevent sticking.
- Pour about 1/4 cup of the rice mixture onto the center of the waffle iron, then spread it out to the edges, making sure to cover the entire surface, and cook for 3-5 minutes, until the waffles are golden brown and crispy, then repeat with the remaining rice mixture, about 3-4 times, depending on the size of your waffles.
- Serve the waffles hot with fresh fruit on top, and enjoy your delicious Waalse Wafels, then sprinkle with a pinch of salt to balance the flavors.
- In a small bowl, mix together fresh fruit and a splash of lemon juice, then spoon it over the waffles, and serve immediately, to add some extra flavor and freshness to the dish.
